Keto Pecan Pie Bars 

You can substitute butter for ghee, olive oil or coconut oil 1:1. We suggest using good quality dairy in baking, like a grass fed New Zealand butter or Golden Ghee Co organic ghee.  

Ingredients 

Pie Base – 2 options, almond or coconut flour 

2 cup almond flour (or ¾ cup coconut flour) – we use Lotus almond or coconut flour 

1 tblspn pure maple syrup or coconut sugar – we use Global Organics maple syrup 

1 large egg (2 eggs for coconut option) 

1/4 teaspoon salt – we use Lotus Celtic or Gourmet Organic Himalayan salt 

1/4 cup unsalted cold butter, in cubes (1/2 cup butter for coconut option) 

1/4 tspn nutmeg – we use Gourmet Organic nutmeg 

Filling 

115g unsalted butter 

1/2 cup pure maple syrup (or coconut sugar) – we use Global Organics maple  

1/4 cup pure cream – we use Maleny Dairies 

3 large eggs 

2 tspn pure vanilla extract (not essence) 

1 cup chopped pecans 

Method  

Preheat oven to 180 degrees Celcius (or 160 fan forced). Make pie base. Process all ingredients in food processor until it starts to form a dough. Press dough into the base of a greased baking tray, glass or stainless steel – we never use silicon due to microplastics, or non-stick due to toxic chemicals. Bake in moderate oven (180 or 160 fan forced) for 10-15min, until lightly golden. Cool. 

TIP: If using oil in the base mixture, you may notice oil has risen to the top of your pie crust. This will go back into the crust once cooled. 

Now make your filling. Melt butter, cream, maple and vanilla in a medium pot on the stove. Cool. While still warm, beat the eggs into the mixture, mixing well. Spread pecans evenly over the pie base and pour the egg mixture over the pecans, onto the base. Bake in moderate oven (180 or 160 fan forced) for 45 – 60min, or until just set. Cool fully before transferring to the fridge to set completely. Cut into squares and watch them disappear in front of your very eyes when the family visit for afternoon tea! Option to serve with a dollop of fresh whipped cream. Yum
